But It Just May Be A Lunatic You're Looking For
MR and I had one of those classic pop music moments the other day. I don't remember what we were talking about, but he said, "You may be right."
I answered, "I may be crazy."
And we said in unison, "But it just may be a lunatic you're looking for."
If there was ever a moment when the truth about two people and their relationship was spoken, that was it.
We had another of those CR geek moments later that day when I was planning our dinner on my DWIDP (for those of you who are new to the blog -- welcome! -- that's Dr. Walford's Interactive Diet Planner, nutritional software that I use to monitor my calories and nutrition.) I had just finished entering the data for the stuffed peppers, vegetable soup, and glass of pinot noir that I was planning to serve for dinner. The ratios came out MR Zone perfect: 31:41:28! MR eats a little more fat since he doesn't want to overdo it on the protein at his calorie level, and the Zone thing is to find your protein grams, match them with carbs, and fill in the rest with fat. So I excitedly showed MR the computer screen and we had a happy CR geek out fest.
Here's what I made:
Green Peppers Stuffed with Goat Cheese, Tomato and Basil
Wash and cut the little heads off of however many green peppers.
I made MR's in one giant green pepper -- 238 grams. I stuffed it with 85 grams of goat cheese, 100 grams of tomatoes, 5 grams of fresh chopped basil. Then I drizzled in some white wine vinegar with tarragon, covered the pepper with its pepper hat (that I had previously cut off) and put it in the baking dish with my pepper (half the size of MR's, as I am half of him) and drizzled with a bit of chardonnay, leaving a substantial pool of chardonnay at the bottom of the baking dish so that the peppers would be standing in it. Bake at 350 ish for abouut 45 minutes with a lid on the baking dish (though it's okay if you don't have a lid), adding more chardonnay periodically to make sure that the peppers are always standing in a little pool of wine (happy peppers!) Yummy!
The rest of the meal that I served included free range organic chicken broth brewers yeast soup with half a bag of carrots, broccoli and cauliflower. I only gave MR one tablespoon of brewers yeast, as his nutritional day is not entirely dependent on it.

How cool is that... we finally figured out how to save the nutrient crunch and copy it onto the blog! Yea!
We're having lots of fun here cooking for each other and working on our computers side by side. He's working on stuff for Aubrey, I'm working on grant applications for the MF. I'm constantly sipping green tea sweetened with sucralose, to which I am rapidly becoming addicted. For breakfast, I have one cup of eggwhites and one teaspoon of flax oil. When MR makes his breakfast salad, he puts aside one for me (half the size!) and I eat it with my lunch, as I enjoy eating more at lunch and have historically had my salad at midday. So my lunch is one cup of cottage cheese, my breakfast salad, and half a megamuffin. For dinner we do his recipes some days and mine on others. Tonight I'm making my lasagna, which he loved when I was here in Feb.
Okay, back to the grant.

Hey April,
I have three thoughts for you guys:
1) Yum!
2) Does this mean I can eat 18 g of sat fat in one sitting without the CRONie police coming after me? I hope so, because I have a sneaking suspicion that tonight's Team Tennis dinner is going to involve cheese.
3) Why can't more people cook healthy food like this? I think a sizeable portion of the population would enjoy eating honest, healthy food if it were well prepared. "You mean there are flavors other than chicken fried? Who knew?!"
Luckily, I just had breakfast or I'd probably be raiding the Trader Joe's right now for goat cheese :) My breakfast, BTW, is sort of a hybrid of yours and MR's: (1) Egg white & veggie scramble on a bed of spinach and (2) yogurt and fruit (and, yes, April, I also add a tsp of flax oil :)).

P.S. It's actually kefir and fruit, but I usually say yogurt because people actually know what that is.

For those who don't enjoy traditional "exercise", dancing to Billy Joel's higher energy up-tunes might provide some cardiovascular benefits. Can't beat the music, either! JD ;-))
