Lasagna -- Variations on a Theme
MR loves my lasagna, so I keep making various different versions of it using Trader Joe's marinara. Basically, if you put marinara sauce, cottage cheese, vegetables, and flax oil into a bowl, MR will love it. Lately I've even stopped putting in mozzarella... he seems to prefer it with flax oil for fat instead, and it's certainly healthier that way.
I am wondering... how would the lasagna taste with goat cheese?

I love cheese. One of my CR theories on cheese is to use the smallest amount of the strongest flavored cheese. This way 1/2 an ounce gives you lots of cheese flavor. My favorite cheese of all is Arina goat gouda. It's like a tangy sharp cheddar. Feta cheese - which can be cow, sheep or goat cheese - is a reasonably healthy cheese. I tend to get Eastern European varieties. Skip the French ones - they are too rich and creamy. All vegetables tast good with goat cheese - but spinach especially!
