Curried Carrot-o-Tatta
280 g eggwhites
1/2 cup nonfat plain yogurt
210 g carrots, thinly sliced
curry powder
dash of half-salt
Mix all together. Bake at 250 for about an hour and a half to 2 hours. Remove and top with juice of fresh lemon. Serve hot.
It's a great way to get rid of leftover carrots, while turning your Orange One even oranger!

Church goodies for Easter......
Like other churches at Easter we have a lot
of people who don't come other times of the
year. After church, we have a coffee hour, so
we were asked to take extra goodies for
tomorrow. We are a very healthy eating church, so I feel free to take something healthy. We also have a practice of listing the ingredients
with the food, in respect for people with special
dietary needs. So what shall I take? I think some fresh fruit that's easy to eat. I was thinking of tuna salad, but I'll save that for the next potluck. I'm so glad that I can eat at church and also take food that makes me and them happy. Marti
