Return of the Squash-o-Lasagnish
MR has been missing my lasagnas, which are made CR-friendly by substituting yellow squash, zucchini, arugula, or another green, for pasta. Today I decided to make him one with squash, which apparently the Canadians call yellow zucchini. It has caused much confusion in our household.
I layered squash discs with nonfat cottage cheese, fat free ricotta, capers, garlic, and tomato sauce. Now I'm baking at 250 for about an hour and will top with a teaspoon of olive oil after removing from the oven. I may sprinkle on some dried basil and oregano as well.
This afternoon I leave for my union's annual convention, and VLC, who is making a cameo appearance at our union for a special project, is riding with me to Harrisburg. I'll stop off at Mom's house beforehand to make sure she has everything she needs. Then off to what will no doubt be two days of fending off catered gak. Here's my plan:
1. Eat any available vegetable, even if it belongs to another party.
2. Eat any available protein source, even if it requires scraping off sauce or gravy.
3. Avoid any dessert.
4. Avoid any hors d'oeuvres.
5. Drink only red wine.
6. If in doubt, call MR for a pep talk.

A perusal of foodtv.com (an excellent resource for all things food-related) and a few cookbooks reveals this: the green ones seem to be universally called zucchini and the yellow ones are usually called summer squash or, if you're in England or using a British cookbook, courgettes. I have heard them referred to as yellow zucchini, but not by people who are really into cooking. (Sorry, MR!) Here in Canada, when you use the term "squash", it usually refers to large ones (like banana & spaghetti squash) and those with hard shells (like acorn and Hubbard squash). Shalom in the home! JD :-)

I saved the April 2006 web page as "Foods of Death at the Nurses Convention!! [April's CR Diary April 2006].txt" ... will edit it when time prevails to just have the comments and descriptions regarding all the Foods of Death that were served. Unfortunately, that appears to be standard Foods-Of-Death fare in hospital settings, as well as everywhere else.
