Tofu Night Chez L'Orange

Tonight was tofu night in the monument to Orange-ness that is our kitchen. I have a tomato tofu dish that I almost always make on our tofu nights because it is so yummy. It comes to me care of my ex-boyfriend Bill Beckler, who used to be a vegan back when I was a vegan. Here 'tis:

Boil up some veggie broth. To it, add some grape tomatoes (or you could use regular). I used 200 grams in MR's dish, 100 in mine. Allow to boil till the skins turn wrinkly and you can pop them if you want.

Add about 50 g scallions. We have these gargantuan scallions growing wild in our back yard. They were so huge that I measured them with a tape measure. 32 inches. Two and a half feet of scallion. I am not making this up. I feel like we should mount one on the living room wall like a giant trophy fish or something. They're blank-ing huge! Anyhow, chop em up and put em in the broth, at a low boil.

Add tofu. I put 3/5 of a block into MR's and 2/5 into mine. I bumped up the protein in his with 150 g eggwhites to hit Zone ratios.

Allow to oooze together, adding a dash of garlic powder, between two and three teaspoons of low sodium soy sauce, and fresh ground pepper (a few cranks of the pepper mill.) Remove from heat. Add one teaspoon flax oil or olive oil. Serve hot.

As a side dish, I made a salad of steamed asparagus over baby bok choi with avocado, dressed in a soy, lime and ginger dressing. Basically I steamed 155 g asparagus, chopped into bite sized pieces, for two minutes. Then I covered the asparagi with a "head" of baby bok choi, and topped with diced avocado. Threw on a little less than a teaspoon of soy sauce, then a teaspoon of fresh lime juice, then a dash of ginger powder. Followed by a teaspoon olive oil. It turned out great... a whole CR Asian fusion meal.

I have been a blog reader for about three months and have read all your archives as well... you could say I was obsessive, I'm just really interested in this. (As well as reading a milllion other diet and health books, magazines and websites). I am not overweight, in fact I'm quite slim, just trying to improve my health.

I love your blog, it is very inspirational and has a lot of good ideas for CRON, ALTHOUGH I must say, you are a teensy bit vain girl! Maybe you give yourself a few too many pats on the back... Just do it already!

ALSO I would get so bored eating the same same SAME thing every day. I eat high protein low carb, low fat and have done since starting to read your blog. I have a zillion different things for brekky! Are you stuck in a rut girl?? Ever heard of spices??

Sorry to go so hard on you but... you gotta admit it is a bit boring! Anyway, I'M enjoying a HUGE variety and loving it. I've got more energy than ever before. I've lost three kilograms in about 2 months, and I'm less hungry... Surprise surprise!

Thanks for the effort you put in with this site.

PS: I just downloaded your suggested software (for Mac yay) the Cron-o-meter. I'ts great! Although, how do you enter any supplements you are taking, manually adjust the vitmins/minerals?? Just a technicality.

I don't understand what this wookie guy is up to.
He is calling you vain, then he admits he is interested in what you say and downloading the software, etc.
When I called you vain, I wasn't interested in anything you said. When I became interested in what you said, I didn't think you were vain anymore.
So, what's the deal with this guy? What a major hipocrite! He thinks he can insult you and make use of your knowledge at the same time. He has the guts to call you vain and then ask for advice.
See, that's fucked up.

April doesn't have a vanity problem... but your comment is an amusing example of a 'pot calling a kettle black' or something.

It's annoying to me when we restrict others or ourselves from celebrating themselves/ ourselves... what's the problem in it? It sounds like psychological health to me.

Hello April!

Disregard my former commenter. Yes, the appraisals may be a bit vain, but it's so good to check the site and get a daily dose of positive encouragement that yes, this is the right thing to do. I just read the New York magazine article and am a complete though interested novice at CRON. What caloric intake would you recommend for a 5'6" 18 year old? I understand the ratios between proteins, carbs, fats, and all that, but everyone's diet is individually tailored and i'm just a bit confused how you arrive at your ultimate calorie restrictions.

Hey April,

Got a logistical question for you. When you're preparing your meals and MR's meals with, of course, different amounts for each of you, do you prepare them in entirely separate pans, or do you make one dish then separate it out afterward? I was curious as this is something I sometimes struggle with at home: four burners on the stove, and three or four dishes taking up said burners. It would be easier for me to track my intake if I cooked my stuff completely separately, but I'm just not sure how to handle it logistically.

Not one of the great unanswered mysteries of the ages, but something I've been wondering for a while.

BTW, I was internetless for the past few days and just caught up on your flurry of posts. Good stuff - very re-inspiring (you know me, always looking to be re-inspired :-). Also, I'm totally psyched to try your tofu dish. I'm gonna do it this week, I swear!

Hi April,

I was shocked to read that you are now eating tofu. Have you and MR changed your thinking about soy and soy products link to dementia? I ask because I've read the research and consider soy and soy products safe to eat in moderation although I think that it is important to eat a very diverse diet so I don't rely on them too heavily.

Don't know about the tofu dish but the Asian Fusion asparagus is awesome!! Amy, imagine the dance we're going to choreograph when cooking with MR and April at Christmas time -- picture 3 people clustered around a 4 burner stove, making related but not the same dishes, for up to 10 people. It's a good thing none of us is fat! ;-)

Hi Jen!

MR and I eat tofu once a month, as we completely agree that it's a food you want to consume sometimes but not all the time. He has certain foods that he eats about once a month, to add variety while minimizing risks. Basically, once a month he has a meat of some kind (usually turkey or scallops), and once a month we have tofu. I do love tofu night, and at holiday time the meat night gets taken up with turkey at Canadian Thanksgiving, American Thanksgiving, and Christmas. Recently, thanks to MR's mom introducing us to the wonders of a very nutritious and minimal sat fat fish, tilapia, we've decided to add a tilapia night once a month too!

I eat meat more often than MR because I eat out both for work and socially, and it's usually easiest to get a piece of grilled chicken on a salad, or some shrimp. I also eat shrimp and crab with my mom, as they are among our favorite foods and low in calories.

Try my tofu recipe... it's really, really good.

wow, that side dish sounds tasty ^_^ will have to try it out.

I just downloaded the CRON-O-METER and tried my hand at creating a balanced daily meal based on what I normally eat... wow, it wasn't as easy as I imagined...

Could you post a typical day's meal as a reference for some of us looking to learn more?
