Fire Roasted Tomato Vegetable Soup
For the fans of the pick your own protein feast, here's a quick and easy weeknight recipe you can throw together in ten minutes flat with whatever you have lying around.
All you need is a cube of veggie boullion, a can of Muir Glen Organic Fire Roasted Tomatoes (don't whine about the price, you know you're saving money by putting this hearty stew on the stove instead of going out, grabbing takeout, or using prepared or frozen foods) and whatever vegetables you have in the house. Add to that your protein of choice and a fat source (olive oil, flax oil, cashews, avocado, you pick!)
Tonight I'm using a cup and a half of the tomatoes, plus 87 grams of asparagi that are about to go bad, 60 grams of kale stems, and 163 grams of brussels sprouts. To that I'm adding my easy protein source, cooked eggwhites cubes, and after removing from heat, I'll put in olive oil, flax oil, and avocado.
It's an easy one dish supper, hot on a cold night and filling but packed with healthy veggies and a fire-roasted taste that's unusual and exciting. I love this dish.
It's also good with Quorn dogs!

Yummm! yum yum yum! But we don't have fire roasted tomatoes prepacked here, so, can I just roast them tomatoes on my stove to get the same effect?

I love the canned tomatoes by Muir Glenn, they are so worth the price.
I buy the salt free diced tomatoes.

Where has this headache come from? It is about subsided but it has been persistent for about three days. Three days of low calorie, high nutrient, which also seems to eliminate lots of carbohydrates! And why after four hours of sleep last night did I find myself wide awake! Unable to sleep for three hours. I did eventually get a little extra rest and made it through the day with out even feeling tired. Disoriented, yes. But not tired. Eating out on this diet is tough. What do I do with a husband who after three days is already tired of my diet and ordering my food for me? Well, he can’t force feed me. Today we ate out twice! Once at the Olive Garden and once at Applebee’s. Olive garden was easy… Salad with a small bowl of minestrone soup. Lots of tomato and stewed veggies. But tonight I get to Applebee’s and he insist that I order Orange Chicken. Or shall I say, sugar coated, battered chicken on a bed of rice with some steamed broccoli to make it look healthy. So, I smiled and asked them to put the orange sauce on the side! That way the rice did not stick to the broccoli or the chicken. Through the meal I avoided the rice and gingerly appeared to dip the chicken in the sauce exclaiming all the while my delight. The dinner went quite well and in the end I ate far less than I would have pre CRON. While I would have preferred the half grilled chicken breast and steamed green beans I had waiting at home, it was not in the end, devastating. I hope. It is hard to believe but my body is already responding to the changes. Even more, I do not have a problem with wanting things outside our nutritional boundaries. I do have little habitual tendencies that I have to check myself on, filling my bowl for a second round when I have already eaten what I had planned… but I catch myself and push the bowl away without any great battle. So I have the quality down but I am still working on the quantity control. I know not to grab a bread stick but then I find more salad in the bowl without realizing how it got there. Tomorrow will be better though I am not unhappy with my performance today. If you have any idea’s how to combat the husband without him realizing that I am winning I would appreciate the help. A few things. Are you sure you're getting 70 grams or more a day of protein? You probably are, but check to make sure.
Are you drinking a lot of water? Don't go too crazy, but drink quite a bit of water, though it's better to drink it between meals instead of with.
Are you eating enough fat? Olive oil, nuts?

note to kelly - when i stop eating sugar after eating lots of it for a while, i get a withdrawl headache for a day or two. it could also be withdrawl from something else (caffeine?) - my body is just super sensitive to sugar.

Hello everyone. You have been with me on my journey through the day. Not once have I sat down to a meal without knowing that I would report into ‘the group’. Which is a lifesaver because I ate at Lamberts for lunch (Home of the throwed rolls!) and went to a Christmas Banquet this evening! I will be grateful for this season of hope/gluttony to end! Really people, isn’t there anything to center ones fellowship around other than FOOD! I need a new group of friends! Anyway, the whole purpose of Lamberts is to gorge oneself to the point of illness. Believe it or not there are many things on the menu to eat that would not destroy a CR diet so I survived relatively unscathed. Tonight I did take a bite of cheese cake and one of apple dumpling. I was rather gluttonous with the delightful pecan, poppy seed, strawberry (tinny little pieces) and mango salad. But only ate the legs and thighs of the Cornish hen along with a few green beans. I left the plate basically untouched. The very best thing about this lifestyle change is that my beautiful little angle will only eat whatever I am eating and that means she skips the dinner rolls and only takes a nibble of the treats. I can’t believe the change in her figure over that last couple of days. She is a very talented ballerina and it is difficult to watch her go to class with micro mini girls that can eat their weight in chocolate daily and still be nearly invisible from the side view! Audrey is not fat but gets a bit cubby periodically. So that we have to do extra walking and no eating after dark for the two months prior to her recital. I won’t allow her to look back on pictures of a pudgy princess masquerading as a ballerina. I am very gentle about the subject but also straight forward about the result of more food intake than needed. We have never allowed sugar in the house but my husband has always thought it was cute to spoil a girl with too many treats. Thankfully she is starting to tell him “NO Thanks!” We do not mind the diamonds however, spoil away! Hehehe. I am sure that both of us could have done better today but we did beautifully compared to our pre-wanna-be CR days! Thanks for letting me ramble. Knowing that the truth about today’s choices will be lit up on the blue screen prior to the nights rest keeps me from the little wrongs that don’t always seem so wrong but are and we know it! Hi April! You say it's better to drink water in between meals rather than with - is there a reason? I have heard this other places but never with any decent explanation. ali
