Megamuffin FAQ
I've been getting a lot of questions about megamuffins lately, so I figured I'd post some of the answers in case you're wondering too!
1. Do I use the whole orange, including the peel?
Yes.
2. Where do I find guava?
Asian grocery stores often have it. Use the whole fruit, including peel.
3. I can't find guava. What do I do?
If you can't find guava, you can substitute frozen organic strawberries (strawberries have serious pesticide problems so please use organic) isocaloricly, but that will leave you short on vitamin C unless you also use strawberries as some of the dried fruit. MR and I made a batch of strawberry cherry muffins this morning, so I'll post the numbers on that for you later on.
4. I can't find K Metabisulfite.
Try a home wine making store. If you can't find it, you can make a batch without it.
5. I can only find NAC powder in capsules. Can I use those?
Yes you can, but it will be a pain.
6. Do you mean Belgian endive?
No, curly endive. It's green and is also called chicory. Use all of it, including the stem part at the bottom. Just chop it up.
And whatever you do, don't put all the milk into the food processor. Just put in enough to blend. Otherwise you'll end up with green slime all over your kitchen walls.

HI April!
Love reading your CR diary as always! A few comments/questions about some entries over the past few days:
1. I noticed you mentioned you are still menstruating (the night you talked about having cramps). I think that is HEALTHY!!! In the CR book written by Brian D. and Lisa W. - their recommendation is that when a woman's BMI gets too low and ceases to menstruate - that is a sign she has gone too far. Just wondering what your thoughts were on that because it seemed like you said your CR girlfriends "assured" you that amenorrhea is "right around the corner."
2. Iwas wondering if it would be a pain for you to list EXACT quantities of your daily food intake when you report it -- for example, you say you have almonds often -but how many? Or how much yogurt of brewers yeast goes into that evening soup meal? that would be so helpful if you could do it - if not too much trouble.

Hi April,
I do not practice CR but have been reading your blog for about a month now. It is helpful to read about people who think of food diferently than most of my friends. I'm 24 and slightly overweight. I grew up in a household where food was emotional medicine and am currently trying to live a healthier lifestyle. I'm going slowly, as I know this will have to be a life long change and not a crash diet. Though I am not quite ready for CR, I was hoping that you could help me to refine my diet and feel a little healthier. My most immediate goal is to lose weight: I feel uncomfortable in my skin and in most clothing. But the more important, long term goals are to improve both my mental and physical health through healthier living. For six weeks now, I have been going to the gym 3-5 times a week, doing a half hour of cardio and a half hour of weight training. When I am having a healthy day, I've been drinking a yogurt/ flax/oat/ frozen fruit smoothie for breakfast, a half cup of soup (or half a sandwich) as a late lunch and then cottage cheese and/ or an apple or orange as a late snack. Usually, I have veggies and some protien for dinner. This is still leaving me hungry and with cravings throughout the day. Therefore, I do not always adhere to healthier eating. Do you have suggestions, besides the megamuffin, which I apppreciated, for altering this?

Cait, I have had fantastic results (41 lbs in 2 years) following the basic concepts of The Zone, a wonderfully healthy diet. I order my mega muffins and they are great. I actually convinced her to make me the savory (not sweet) muffins that April is always so excited about. I eat them with a little hot sauce and mustard and they are GREAT. The baker (Andrea) loves them as well now! You can order right online, takes a couple of days to get them, store them in the freezer and there ya go. I just do not have the kitchen capacity to make them myself and I am in general a HORRIBLE baker!

Hi, I also order from Andrea. Since I'm lactose intolerant, she makes mine with soy milk instead of milk. I don't mind the eggs, so I don't request that those be taken out. I wanted to add to what April said regarding guava. When I lived in Miami, I always found pure frozen guava pulp, without any other ingredients, in the frozen food section. It came from Colombia. I suspect you may be able to find it a latin american grocery stores.
A funny experience with my muffins. Someone threw out a plastic ziploc bag from the office refrigerator, causing me to lose a week's worth of muffins. I now store them in a fancy Shaeffer Berger chocolate shopping bag (the kind they give you when you buy chocolate truffles - OK I admit they were a gift for my cousin and I had one, well, two.) No one has been touching the muffins now. Cheers, Arturo

Did I miss something? Why are you using the Metabisulfite in your megamuffin recipe? I've used it in mead making, but I don't think you need to worry about stopping microorganism growth in a megamuffin. Or at least I don't 'cuz I store mine in the freezer. :-)
