Cold Foods For Hot Days

It's so hot here that no one really wants to eat. And once certainly doesn't want to turn on the oven or stove. So I'm looking for cool ideas for cold foods with healthy ingredients. My cold cruciferous salad was a big hit, and I'll be doing a gazpachzo soon, but I need more inspiration. Thoughts?

I know it's not cold food but...
We just got a grill and I'm smitten with it.

I think you could grill just about anything - namely vegies and it won't make your house a hot box! But boy watermelon surely does sound good. :)

Hi! I'm a longtime lurker, and decided I should finally post something. I'm not sure if hot foods just don't appeal to you in the hot weather, but I tend to make a lot of soups in the crock pot over summer. It doesn't heat up the apartment (we live in Texas, so it gets hot!), and dinner is waiting when my SO and I get home!

Hi April--like Jessica, I'm another longtime reader but haven't posted any comments until now. Your blog is such a pleasure to read! I recently found this recipe for a chilled soup in Real Simple, and I can't get enough of it: you blend a bag (16oz) of frozen peas (slightly thawed) with a small bunch of watercress leaves, 1/4 cup of parsley, 2/3 cup of low-sodium veggie or chicken broth, and 1/4 cup low- or nonfat sour cream, plus a dash of salt and pepper... and that's it! It makes enough for three generous servings, and it's about 150 calories per serving, and I think the nutrition is pretty impressive.

Hi April,

I've been reading your blog on and off for a while now - thanks for the upfront and honest play-by-play of your days - it's really fascinating.

What is your view on quinoa? I know that you are anti-nutrient-less breads in general, but haven't been able to find any entries on this grain.

I make a quinoa/mango/mint/bell pepper/tomato/peanut salad that I really enjoy (in case you were wondering how this is relevant to your post).
