More Stuffed Mushrooms!

Dinner tonight: large mushrooms, white, stuffed with Quorn grounds, nonfat ricotta, basil, garlic, oregano, topped with capers, stewed tomatoes (no salt added) and fat free mozzarella, melted in the microwave and topped with flax and olive oil. Sides of broccoli with lemon juice and garlic, hazelnuts, a bit of eggwhites to bump up the protein

YUM!!!

Dear April,
I've been reading your blog for about 6 months now, with what I thought was just curiosity. However, for about the past 2 weeks, I've been using the Cron-o-meter software, and it/CR is changing my life in so many ways. Hey! It took me many years to have fresh ginger in my kitchen. I've started in the past year to buy ginger and then cut them into 1 inch pieces. Then I freeze it in a freezer bag. I never use very much ginger at once, and this way I can use it at my convenience.

You're going to think I'm weird... but I googled "chocolate nightmares" and got your blog entry from January 2005 on your old blog, lol. I get nightmares when I eat chocolate before bed too! I just figured it out! No more chocolate in the evenings, boo :( Just thought you would find it interesting that someone randomly got here from Google! ciao!

Hi, April - I'm a ginger fan and use it along with lime and garlic in a lot of dishes. When I buy it, I freeze it whole. Then, when you grate it, there's no need to peel and it doesn't stick to the grater, just kind of crumbles because it's so brittle. Hope this makes things easier in your busy life. Thanks for all you do, both in this blog and in your "real" life.

This question is for Theresa. I haven't tried freezing ginger. But how come you would not need to peel it? Does the skin just fall off? After the skin falls off, you use a grater? Somehow I'm not clear on this. I use ginger in my pates weekly.
