Cucumber Celery Salad

Oh this is so good. And extremely low calorie: 14 calories per hundred grams.

Here's how I did it:

355 grams of celery
345 grams of cucumber
tarragon white vinegar
red wine vinegar
garlic powder
dried tarragon
1 tablespoon hoagie topping style hot pepper blend... 5 cals per tablespoon

Dice the veggies, mix all together in a bowl, allow to marinate.

I'm serving this for lunch over romaine with Quorn tenders, cubed eggwhites, avocado and olive oil, with a steamed lemon cauliflower dish with fresh parsley, garlic, and fresh pepper on the side.

I haven't been cooking much since I've been on the road nearly every day of the week, so it's very exciting to finally be home and be able to cook again! Of course, I'm back on the road next week...

April, your recipies always make me salivate! For a non-CRON, like myself, this is rather amazing to me. (I mean, celery rarely makes my mouth water, unless it's laden with a mayo-rich egg or tuna salad glob of yumminess at the end of the stalk). I think you should write a cookbook. You'd probably convert alot of non-CRONS to eating more as you do. Only thing is, I doubt we'd go for your portion sizes. That would be the tough sell, but *not* the food, itself.

As to portion sizes, my personal portion sizes are sometimes on the small side because I can't eat too much volume at once, but this is not typical of CR folk. In fact most CR folk I know eat more, volume-wise, now than they did pre-CR. MR eats huge, huge volumes of food that non-CR'd guests can't finish if I serve them the same amount. Even his mother, who raised three sons through teenage years, is amazed at how much food he can pack away. The difference is it's low calorie veggies.

I used to love those mayo-rich tuna and egg salad type of things. One thing I enjoy doing now is to make salad-esque things with nonfat yogurt, garlic, and fat free sour cream or cream cheese instead of mayo. It's amazing how similar it is. Then you can add olive or flax oil or nuts to have some good fats.

April, I truly admire how skillfully you are able to convert recipies to a CRON way of eating. Now, the thing is, I will probably always love egg yolks in my deviled eggs, for instance. But, on the other hand, you really show how food can be created, in low calorie/fat ways, yet still be very delicious. Reading your blog, I feel a renewed interest in veggies and in sauces and condiments to improve their flavor. Your food definitely is good for anyone, not just CRONS.
