Cold Non-Creamy Shrimp Salad?
Okay, bloggie friends, figure this one out.
Tomorrow night I'm having a friend over for dinner. It's going to be very hot outside. He eats seafood. I am thinking I'd like to prepare a cold shrimp salad, but obviously not one of those goopy mayo-y salads. Vinegar, herbs, spices, shrimp, veggies.
Suggestions?

Shrimp in a lime cilantro vinaigrette with some nice chopped red pepper, scallion, raw zucchini and raw summer squash maybe?

Similar to Rachel's. Treat it something like a ceviche--if you're wary of "cooking" the shrimp in lime juice, pre-cook (if you could get them to butterfly, that would be brilliant for holding sauce/dressing), then make a dressing of lime juice (perhaps diluted), a bit of olive oil, a little each of chopped fresh tomato, green olives, jalapeno peppers, cilantro, and diced avocado stirred in right at the end (so it doesn't mash up too much). Salt, pepper, and just a touch of the sweetener of your choice (I would use real sugar here--not too much). Toss, let stand a bit, and serve with the crispy base of your choice (can't think of a good CR one right now--corn tortilla chips would be awesome tasting though hi-carb/cal), or just over greens like frisee, maiche, and I think even arugula. I wish I could make this right now!
[And no, I'm not back, not yet--jeez, so much has happened since the last time I was in touch with any of you--some of it good, some of it awful. Health is not great right now but I'm on the upswing I feel. I will blog soon enough to provide an update. I'm desperate to re-connect with the CR lifestyle.
