Cauliflower Breakfast
By far, my favorite part of the Christmas meal is the mashed cauliflower. In fact this year I had 300 grams of it! MR makes it by blending cauliflower, yogurt, garlic, and a tiny bit of Walden Farms coleslaw dressing in the Vitamix. I think there are some chives in there too, not sure. Anyhow, they're amazing. Most people think they're too garlicky but I can't get enough of them.
So this morning, as a side dish to my breakfast cottage cheese and flax oil, I had a delicious dish of mashed cauliflower. Now my friend Lin in the UK can rest assured all day that I've had my cruciferous veggies!
Now I'm not trying to convert anyone to eating cauliflower for breakfast, but if you like mashed potatoes, you should really give mashed cauliflower a try. They are so very yummy.

I've always heard mashed cauliflower tasted like potatoes. I've never actually tried it, though I always think about it then never do. It does sound really yummy though!

I have a question that you may have answered before, but if so you can just point me to the right place. I find that whenever I try to drop my calories and increase the fruits and vegetables, I experience a certain amount of... gastrointenstinal distress. My guess is that it's from the increase in insoluble fiber. I haven't paid enough attention to notice if certain foods exacerbate it, like berries or grapefruit. Do you or other readers have advice?

so is mashed broccoli with garlic ( I can never get enough of it) olive oil, pine nuts and lemon. You can substitute lemon with light plain yogurt for a creamy texture. I've also tried broccoli and carrot mash with coriander seeds, garlic and yogurt. I think there still are tons of different vegetables to be mashed with different spices and flavours, which I'd rather take than the plain old mashed potato.

I have always wanted to try this! Just a question: can you make it without the coleslaw dressing? I don't keep any, and I don't think I'd use it enough to buy a container.
I've heard that it's an excellent substitute to mashed potatoes too.
