Happy New Year!

In spite of ongoing sadness over the passing of Philomena, we had a nice New Years. I made one of MR's 2008 favorites: curried pumpkin portabella mushroom pizzas. I also made a salad of collard greens and squash, plus a new creation: eggnog!

MR decided he wanted eggnog, so I synthesized it as best I could. 3/4 cup of kefir, 1/4 cup Eggbeaters (which we rarely use due to synthetic vitamin A but every once in awhile is okay) and a bit of rum extract, plus cinnamon, nutmeg, and a dot of sucralose (you could use Splenda.) It turned out well... he liked it.

This morning MR made us his special Sunday breakfast, even though it's not Sunday. That's our traditional eggwhite vegetable scramble with low-carb pancakes, though I rarely eat the pancakes anymore because the eggwhite scramble is sufficiently filling for my breakfast.

Today for New Years Day I'll be making a dish of collard greens and black eyed peas, to bring prosperity and good luck in the New Year. I'll post the recipe once it's done!

I am so sorry to hear of the death of your cat. I know she was a loved member of the family and that you will miss her dearly.
I enjoyed reading about her in your posts and am certain that she led a long, healthful, spoiled life.

Finished reading Dr. Furhman's fasting for health yesterday. I don't think I have the time to fast, as he suggests, due to work but the need to heal is evident. I am also from the South so we also had Collard greens (made in the pressure cooker, with vegetarian bacon bits for smoke-flavor), Quorn cutlets, black-eyed peas and rice (white or fried--gotta have the hoppin'johns) candied yams (not very, splash of OJ, the spices and sprinkle of butter and sugar--we do this twice a year tops), 2 cheese shells(back home we call this mac & cheese :)); fresh squeezed citrus-ade with Meyer lemons and lime and organic sugar, and an accident with the cornbread. I like mine sweet and fluffy, so decided to use the left over egg nog (I didn't realize it until you mentioned yours, but I am convinced I was tasting the rum extract, ugh!). That is all for the day. I was not hungry before and will have more fruit and vegetables tomorrow.

Hi April,
I know you already know about my blog, I just wanted to thank you for commenting :) I have been making your portabella pizzas for ages now--they are so yummy and so easily varied. And they totally hit the spot when I'm craving something hot and cheesy, which happens to me frequently in the winter...
