An Astonishing Squash

One of my friends gave me a gargantuan squash from his garden. We measured it: exactly a foot.

I stuffed it with nonfat ricotta mixed with garlic, curry, and shiitake mushrooms, topped with nonfat mozzarella, and microwaved till cheese melted, then served topped with a teaspoon of olive oil per side of squash.

Tonight's dinner is:

Zucchini Stuffed Mushrooms:
finely chopped zucchini marinated in Ortega taco sauce and horseradish, stuffed into mushrooms. Then you top the mushrooms with nonfat cheddar and dot the tops with chipotle Tabasco. Serve topped with olive oil.

Cauliflower "coleslaw"
Cold cauliflower served marinated in Walden Farms cloeslaw dressing and a dash of cider vinegar, pinch of garlic, topped with 1 tsp flax oil

And a dessert of yellow plums in yogurt with Walden Farms chocolate sauce!

The squash sounds super delicious! And I'm a fan of any kind of stuffed mushroom. I never thought to microwave a squash, though--too easy. I tried one of your stuffed eggplant recipes this week and my husband and I LOVED it.

Lately I've been eating a lot of fresh berries with fat free ricotta mixed with a bit of stevia for a tad bit of sweetness. This is definitely a summer favorite treat.

On a slightly related note, I've been going strong with CR for two weeks and I couldn't be happier with how I feel! I had no idea how invigorating it would be to go gak free!

I love your blog. The protein breakfast has been a lifesaver for my morning hunger. I was wondering if you could provide information on the difference between taking flax oil daily versus fish oil daily for omega-3. Thanks.

Hi, you seemed committed to cr, so I thought I would share some cr finds. Shiriaki noddles- the whole bag has only 40 cal. Artic zero "ice cream" one pint has about 128 cal(recommend peanut butter and chocolate)! I could go on for hours. Just some helpful cr hints. I am NOT saying you're anorexic, I am-almost three years of trying as hard as I can to recover from it. I see a nutritionist, who is helping me gain weight, as I am emaciated and only 16, and a theripist who conquered her eating disorder and now eats 2,200 cal a day weighs 123 is a size 0 does NOT burge in anyway and just became a mother almost 2 years ago to a healthy little girl. They are my role models, they teach me that I am more than my weight. And so I am passing my cr food finds on to you, each week.
P.S. I may believe that you have an eating disorder, but in the endit is only you that can seek help. Center for Discovery Eating Disorder Treatment Center is a great place to recover, you get to choose what to eat and if you are in a healthy weight range, they won't make you gain weight, but they will teach how to eat 2,000 or more depending on you're height, weight, and exercise needs. They rev up your metabolism. Just check out the site please. I have seem enough people die from E.D. I nearly did.
