It's Amazing How Much You Can Do With Eggplant

Without breaking the law.

Last night I did my soy ginger eggplant, a huge fan fave round these parts.

I've posted it before, but here it is in a nutshell (or in a hollowed out eggplant!):

pre-cook half an eggplant for 3 mins in the microwave, covered. hollow out with a spoon, reserve innards

mix eggplant guts with chopped broccoli crowns and 2 tbsps nonfat ricotta (or omit the ricotta if you choose) and 1 tbsp low sodium soy sauce and several shakes of ginger powder, or diced fresh ginger

top with 2 oz nonfat mozzarellla

Microwave until cheese melts. Top with 1 tsp olive oil or flax oil after removing from heat.

I just checked out the menus for the conference lunch and dinner. It looks like they're really paid attention this time, as both meals will allow you to choose incredibly healthy, low cal, Zoned meals. Delicious and nutritious! Have a super time!

I can't wait to hear about the CR conference! I would love to attend, but it's just not an option this year. I am hoping to attend next year, though!

Me too. I have wanted to go to a CR conference FOREVER. And this year its actually close to me - ATLANTA!!! Sucks to be broke and have other obligations :-(. Oh well, maybe next time :-).

I'm also sad to not be going to the CR convention - I really enjoyed it in San Antonio. April - do you have any idea how many CR folks are signed up?
Also - could you post the recipe you and MR make sometimes for healthy pancakes - I seem to recall you made these as a treat on some weekends
and do you add anything like sugar free syrup or any fruit/toppings?

Hi Irit,

These days, we use Big Train pancake mix:

These are a bit of a PIA to cook, as they have to be spread quite thin and cook them long and at the right heat or they wind up gummy and uncooked in the middle (or, alternately, burned and/or dry on the outside), but they're very fluffy in the end once you master the art and let them take their time. Also, they're largely wheat gluten, so one shouldn't have too much at a sitting, and obviously they're totally off-limits to folks with coeliac disease.

We *used* to use a mixture of a healthier pancake mix (such as Grandma Nunweiler's Buttermilk Pancake mix, 40 g) plus plain whey protein (20 g), which works pretty well: harder to mix and a bit less fluffy, but easier to successfully cook and (to my mind) a better texture.

We top with flax oil (lovely, buttery flavor) and/or pure, unrefined *high-oleic* sunflower oil (impossible to find anymore, but Spectrum's high-heat sunflower oil is close), and in my case with Walden Farms pancake syrup:

... but do remember that there are ~4 Cal/serving (1/4 C), despite the 'zero Calorie' label claim. I imagine some would also enjoy other WF or DaVinci's fruit syrups, with the same caveat.

Dear Aprilita,
There goes another great eggplant recipe. The eggplant salad as we make it here in Turkey. You smoke 2-3 large eggplants either on stovetop or on open fire, then you take the insides out and ash them. Add to it some grilled red peppers, sliced thin, some low fat plain yogurt, some garlic and some virgin olive oil, a pinch of salt too. Amazingly delicious also as a dip or as a spread.
